1 ½ tsp olive oil (extra virgin)
1 tomatoes (~3 ½ oz)
2 ¼ oz hummus
¼ tsp baking powder (~⅛ oz)
2 whole eggs (~3 ½ oz)
1 ½ oz cream cheese
optional: 1 ½ tsp honey or agave syrup (~⅓ oz)
optional: 2 tsp fresh basil (chopped)
Separate egg white(s) from egg yolk(s). Place in two different bowls.
Add cream cheese and honey (or alternative sweetener) to bowl with egg yolks. Mix until creamy.
Add baking powder to egg white(s) and beat until stiff.
Carefully fold in the beaten egg whites to the egg yolk mixture.
Heat oil in a pan on medium heat. Add two tablespoons of the mixture and fry for around 3 minutes. Repeat until no mixture left.
Wash tomatoes and slice them.
Serve cloud pancake with hummus, tomato slices and fresh basil. Drizzle with salt.
